Hello to everyone...

At this point I think you can guess that I have already had my baby. Norah River Henderson came 1 day after my due date, during all the flooding. She was born Sept 21 @ 11:30 am weighed 7lbs 13 oz and was 19 1/4 in long. We are soooo happy she is here, and are adjusting well to have three crazy women in the house, this not including mommy:)

I really wanted to get back to cooking a little so I will try and do a few random menus during the holiday season and then we will see what happens after the new year. I am going to start out small so I am only offering 2 meals this time around. Stock your freezer for the holidays. Please have your orders in by Sunday at noon...I will have the meals ready for pick up by Wed Nov 4th. Thanks so much.

Hello friends...sorry I have been out of the loop for a couple of weeks. Cooking all those chicken pot pies wore me out, and then life has just gotten more and more busy as the end of the year approaches. At first I was thinking I would say that I had been MIA, but I figured that would mean I fell into a pot while cooking or something.

Here are a couple of pics of my sweet girls. Ice cream snack on the front porch, and a couple from our improvised mini family vacation to Chattanooga. Well, I am back in the swing of things for just a few short weeks, and then we will once again be on summer break/maternity leave for Everything Homemade. Like I said before Naomi was born, I don't have a time or even an answer to whether I will continue cooking. I guess it is more likely since the baby's first months will be as it is getting colder and activity is winding down...but I will have to see how mommy handles three crazy women.

So here is this week's menu...orders in by Tuesday May 26th and pick for Friday May 29th. Have a wonderful holiday weekend! If I cook again it will be the week of June 8th and 9th...please let me know if anyone is interested in getting a few more meals before the start of summer break.

I am back from my trip, and I had such an amazing and memorable time...I can't believe how fast the time flew by. Short of missing my husband something terrible, I could have stayed forever. But I am home and real life is back in full swing, Md/Ob appts, fussy children, nap times....and all the fun that comes with pregnancy.
I am going to pick up with the last menu that I cancelled cooking...so if you had an order and would like to keep it for this week, then just respond by Tuesday at 5 pm. If you didn't order and would like to then please do so by the same time on Tuesday April 14th. Meals will be ready for pick up this Friday. Thank you for your understanding and cooperation. Sorry for the confusion with posting the Meal Options the other day. I just want to move my list of ALL my meals to the front of the blog every once in a while so if new people are finding me on the web they will know what I offer...once again, a little unclear, sorry.
Here are a few pics of the girls and I's trip to Florida this past weekend. We had a good time, but Naomi and I came home with colds and have been laid up all week...it was sunny but a bit windy as well. But you can't beat two beautiful girls at the beach!

I have added a couple of new items to my menu this week. I tested them at home and with friends and they got good reports...I just felt like we needed a little something new. Hopefully I will be able to come up with and find more recipes that we can add to the list. If you have any suggestions, I am willing to test them. Hope you find something you like.

My baby turned ONE!!!!!

I promise that all week last week I was reminding myself to send out a menu. I would think about it, and it would be Tuesday, then I would think about it again, and it would be Wednesday....then I just thought of it, and it is SUNDAY!!! Where did my mind go on Thursday and Friday???? I can tell you...to my two children, and the physical symptoms of having another one on the way! But I came to my senses just now, and I should be back on track. I have Jay here to help me and everything should run smoothly. SHOULD. So here are the menu options for this week. So, I am going to try and add pictures every time I post a menu. I am sure you are all dying to see what my adorable children look like this week! Sorry for the delay, we have had a bit of sickness this week in our house, and I thought it best to wait another week before cooking again for the masses. I didn't figure that anyone would really notice, however, I have had a phone call or two and several emails....so my apologies, here is the food.

Orders need to be in by Monday 02.02.09 and food will be ready for pickup on Wednesday 02.04.09. I know this is a fast turnover, but it just occurred to me that we are going to Florida next weekend to see my family and have a little B-day party for Naomi, so we won't be here on Friday afternoon. Of course you can pick up the following week as well, whatever is most convenient for you. Thanks.

I am sorry for posting a menu this late in the week, or early however you want to look at it, but we have had a bunch going on in our home lately. Jay and I found out yesterday that we will be having our third child in late September. We are sooooo excited and blessed to have this baby. I have had such an awesome time with God this week, just anticipating the assumed results of a pregnancy test but not knowing for sure. He has grown our love for this child so much even in this short time of knowing about it. Please keep us in your prayers as we move into this new phase of our lives.

I have also had people ask me about Gift Certificates, and I wanted to let you know that they are available. The smallest amount available is $20 and then any amount you choose above and beyond. Please include this in your order/email so that I can have it recorded and printed out for you. If a gift certificate is your only order I will be more than willing to mail it to you. When I got up today I didn't make the connection with 9/11 for the day. I pray continued peace and restoration over the families affected in that tragedy. It is a day that truly no American can forget.

I have had a lot of questions of whether I would do smaller portions for 2 person families. I have been hearing from a lot of people how anxious you are for me to get back to cooking, and honestly I need to do it for my own home if for nothing else. We have had a great summer vacation together, I do not regret taking a break for one minute. I will mix in a few pictures so you can see what we have been up to...

I am posting the menu a little early, but since no one is really expecting me to start back up right now I wanted to give everyone time to get around to checking their email. We have a couple of MD appointments early next week, orders need to be in by Tuesday 8.18.08, so food will be ready for pickup on Friday August 22nd. Summer Break...

I have decided to take a break for the summer. I will resume cooking again in the fall, probably around the time that school starts back. I will still be cooking for my self and some of my friends so please feel free to email when you need something. I will keep some reserves on hand for emergencies and would be happy to cook a bit on the side. I just found that my total number of orders was going down, and figured people were busy and would probably be so all summer. So farewell for now.

The meals we get from Aimee's business have been a HUGE
blessing to me and my busy family. We are definitely around the dinner table more than before
thanks to the "home cooked/no effort to prepare" meals we get from her. I
no longer feel guilty about the lack of home cooked meals that I never
seem to have time to prepare since going back to work full-time. And I
have more time to spend with my family since Aimee has done all the work
for me. As if those benefits were not enough, the meals we get are
FANTASTIC and very affordable (cheaper than fast food even)! We have loved
everything we've tried and I think I am officially addicted to the
stroganoff! :) Thanks, Aimee, for getting us around the family dinner
table more often, for giving me some extra time for my family and for
saving us money.

New Ideas, New Options...

I have been thinking a lot lately about delving into the catering world!! I love cooking in quantity because it costs less. It also excites me because I have so many more options of things to cook if they don't have to be frozen and reheated later. I am not sure what types of occasions or how large a group I would feel comfortable catering for, but I am interested none the less. 4.11.08 Menu Early Bird gets the Worm

Here is the menu for 4.11.08...orders must be in by 12 p.m. on Sunday 4.13.08 The early bird gets the worm is that the first 20 orders that come through will be done no later than Wed 4.16 and the second set of 20 will be done by 4.18. A confirmation email will be sent to tell you which group your meals fall into, and another email will be sent to let you know your meals are ready for pickup. Please refer to older posts for cooking directions for the meals you order. Also, since i will only be cooking every other week, if you need to have your meals space saver friendly specify this in your order and i will let you know what i can do and what the savings will be for different containers. I have officially decided to start back cooking for the week of April 14th!!! I hope all of you are as excited as I am. I will be starting off with a few changes to the business, different options, and I am sure making more along the way. For the last two months I have been cooking one day and freezing meals to last almost the entire month. This has allowed me more time with my family, and every once in a while, a free moment to myself. I have loved the convenience that this has been for me so I want to once again give all of you the same option. I work best with bullet points, so here are the assumed changes -

The first change being that my menu for the week will be posted here on my web page. One of the posts is a subscriber option that will notify you by email whenever I update the page...so when I post a new menu you will be notified without me having to send out a mass email. Your cooking directions will also be posted here on the page for access anytime.
The second change that I am still mulling over is the packaging. I have been condensing most of my meals into ziploc freezer bags to save on space, however, this does create an additional step of transferring to a dish. My thought, as of right now, is that you will have the option of crock pot bag, ziploc freezer bag, or oven ready dish for your meals.
The third change is that I am only planning on cooking every other week. The menu will have a few more options than it used to so that you don't have many repeats before the menu changes. The ziploc option will be more convenient for those trying to "stock up" for the two weeks. It will allow you to get more meals for you money and your freezer space. I am still trying to decide what my cut off will be for the number of meals I feel I can handle each cooking week...before the baby my max orders for one week was around 25, so given the two week time frame I am thinking around 40. These meals will be broken up over 2 different pick up dates.

Meal Preparation Directions

Layered Enchilada Bake - Bake covered at 400 for 1 hr. Uncover and continue to bake an additional 15-20 min or until dish is heated through and cheese is melted. Reduce cooking times by 20 min if dish is thawed.

Bacon Wrapped Garlic Chicken - On cooking day, thaw in refrigerator. In large skillet, melt
1 tbsp butter, then add chicken. Cook for 3 min on each side, over medium heat. Reduce heat to low, cover skillet and cook for 8 min or until chicken is thoroughly cooked. Another option is to bake at 400 or broil for approximately 25 - 30 min.

Chicken Marsala -On cooking day, thaw in refrigerator. Bake covered at 350 for 40 min, remove covering and bake an additional 20 min or until chicken is thoroughly cooked.

Smothered Pork Chops - On cooking day, thaw in refrigerator. Bake at 400 for 20-30 min or until juice has somewhat thickened and chops are cooked through. If cooking from frozen state you will need to almost double cooking times.

Heavenly Chicken - On cooking day, thaw in refrigerator. Bake covered at 350 for 60 - 75 min, uncover and bake an additional 10 min to brown cracker topping.

Enchiladas - On cooking day, thaw in refrigerator. Bake covered at 350 for 40 - 50 min. Uncover and bake an additional 15 min or until cheese is melted and contents bubble. If cooking from frozen state you will need to almost double cooking times.

Homemade BBQ and Sauce - Reheat to desired temp and serve, meal is already cooked through entirely.

Salsbury Steak - On cooking day, thaw in refrigerator. Brown steaks in skillet with 2 tbs butter and 1 tbs oil, approximately 3 min on each side, you can reserve drippings and make a brown gravy using flour, water, and beef bouillon. Place browned steaks in casserole dish and bake and additional 30 - 45 min or until meat reaches desired temp. Skillet browning is an optional step. A brown gravy can easily be made with drippings, flour, water, and 2 beef bouillon cubes.

Spaghetti, Tika Misala, Saucy Meatballs, Stroganoff, Burgundy Beef Stew, Veggie Beef Soup, Chili, Saucy Meatballs, Chicken Jumbalaya - Place crock pot bag, with frozen contents, in crock pot dish and reheat on warm all day. You can also remove contents from bag and reheat in med saucepan until contents boil. Meal is fully cooked before frozen.

Lemon Pepper Chicken, Pot Roast, and Rosemary Chicken - Place bag with frozen contents into crock pot dish. Add 1 1/2 cups of water (more for the roast if you like more gravy) and cover with lid. Cook on low all day, at least 8 hrs.

Chicken Tetrazini - On cooking day, thaw in refrigerator. Bake covered at 350 for 30 - 40 min.
Chicken Pot Pie - On cooking day, thaw in refrigerator. Bake covered at 350 for 30 min, uncover and bake an additional 30 min or until crust begins to brown and contents bubble. If cooking from frozen state you will need to almost double cooking times.

Lasagna - On cooking day, thaw in refrigerator. Bake covered at 350 for 45 - 60 min. Uncover and bake an additional 10 min or until cheese is melted and contents around edges bubble. If cooking from frozen state you will need to almost double cooking times.

Chicken Cordon Bleu - On cooking day, thaw in refrigerator. Bake covered at 350 for 45 - 60 min, uncover and cook an additional 10 min or until chicken is cooked and juices run clear. If cooking from frozen state you will need to almost double cooking times.

Meatball Bake - On cooking day, thaw in refrigerator. Bake at 400 for 20 - 30 min or until dish is heated throughout to desired temperature. If cooking from frozen state you will need to almost double cooking times.

Tex Mex Chicken - Place crock pot bag, with frozen contents, in crock pot dish and cook on low all day, for at least 6 - 8 hrs. Top with cheese and serve over rice.

Chicken and Dumplings - Thaw chicken and dumplings out completely before cooking. Bring chicken broth to a rolling boil, drop dumplings individually into the broth, continue at a hard boil for 5 min. Turn the heat down to med - med low and simmer dumplings, occasionally shaking the pot, not stirring or they will break up, to keep dumplings cooking and covered with broth. Simmer until desired consistency, usually about 20 - 30 min. Add shredded chicken and stir lightly with a spatula. Serve Hot!

I haven't posted anything or corresponded with my customers in quite some time now. Our second little girl, Naomi Gray Henderson, was born Feb 10 one week after her due date. This was the beginning of getting used to being on a newborns time schedule again! She will be 6 weeks tomorrow, and her older sister Abigail will be 18 mos tomorrow, and we are beginning to get used to parenting two children. I am excited and nervous to start cooking again. However, I have been cooking and freezing meals for myself since before she was born. Our friends and family provided meals for us for about 2 weeks after we had the baby and it was WONDERFUL! I got so used to having a meal ready without having to spare the preparation time that i started cooking and freezing meals for our family to eat on a daily basis. Since Naomi was born, with the exception of the full day of cooking I did for the frozen meals, I have only cooked 3 meals! I put a meal down on my calender for each day and then the day before I go down to the freezer pull out a meal to defrost and the next day i pop it into the oven and prepare a couple of sides and I am DONE! I LOVE IT! I feel like I have better choices and recipes and a better understanding of cooking times as well. Check out the previous listing of meal choices for some new additions!!

I am currently on a break from Everything Homemade. I am due with our second precious girl on February 3rd and will return somewhere between the end of Feb. or early March. During this time I am trying to make improvements to my meals and overall business tactics. Here is a sample menu of all of the items I have offered so far during my recent months of work. My prices average about $15 a meal, and as stated before feed at least 4 - 6 adults. Crock pot meals come in a crockery cooking bag, fits inside of your crock pot dish so you don't have to wash it! Oven Ready meals come in a disposable container that can be placed directly into the oven to cook, and then thrown away after use.

About Everything Homemade...

I started my own home based cooking/catering business about three and a half months ago. I have a passion to see the family around the dinner table once again. I create meals for families that don't have the time, so they can meet around the table more often. My meals are homemade, the same quality I feed my own family, and reasonably priced. They feed at least 4 - 6 adults and some with leftovers. My desire is to make life easier for the busy family and/or the working mom. It is a privilege to spend time together each evening and I want to help make that a reality in your home.
